Head Chef

Our Head Chef, Denis Baudet, joined us in April 2010. Denis was born in Brittany and trained in France before moving to the United Kingdom for 12 years where he has gained the experience of a head chef.

Denis is married to Kylie Jane, a Kiwi whom he met in London, and they have a baby son. The owners of Prohibition are very pleased with the cuisine which Denis presents and his well organized and experienced approach.

The cuisine can be best described as provincial - a fusion of old-fashioned recipes from various cultures in Europe - which fits well with our 1920's style concept.

Pastry Chef

Unlike so many restaurants in Auckland, which buy in their bread and cheese biscuits from bakeries or even outsource the entire production of their desserts to catering companies, at Prohibition we have a chef who is dedicated solely to pastry. And we are proud and very fortunate to have such a talented pastry chef in Richard Arboleda.

He joined our kitchen team at the end of 2009 after 20 years of experience in this culinary art having started his career in the 1980`s in Manila, Philippines, where he was born.

Richard is recognized as being a visionary Pastry Chef and has won numerous culinary awards, including the title of NZ Patissierie Chef of the Year - 3 times.

All our breads, biscuits, desserts, pastry soup bowls and other patissierie items are his creations.
